Summer is here! I survived another winter in MN (6 years and counting). I can tell you this much….nothing, NOTHING, beats a Minnesota’s summer. The weather for the most part is almost always perfect, theres 10,000 lakes to visit, and I grill almost every night, if not week, for dinner. Spring has finally arrive in the Twin Cities. Some celebrate spring by cooking with the usual spring arrivals such as asparagus, carrots, leeks, etc. I celebrate spring by eating baby green sour mangoes with a special fruit dip! As my bff would tell me, “Savy, you’re so Asian!”. HA!

The dog days of summer are upon us. I can’t tell you how many tubs/boxes of ice cream the bf and I have gone through. While this is an awesome way to beat the heat, we felt bad that we couldn’t share our ice cream with our furbaby Dobby. Dogs need a way to cool down too! Food plays a big part in culture. When you think of cultures around the world you associate certain food with each one of them. For example, when you think of Vietnam, pho usually comes to mind. I was trying to think of what food is best associated with my Cambodian culture. Lots came to mind. The one that stands out the most has to be lemongrass beef sticks aka sach ko jakak. Happy first day of Summer!! It’s grilling season! I love grilling season, but I hate grilling myself. I usually leave that up to the bf because I can’t even start a fire and I’m too scared to use the gas grill haha. When the bf does set up the grill for me, I usually grill really easy simple recipes just because I don’t want to spend my whole time standing in front of the fire. This recipe fits the bill. Dynamite mussels are my absolute favorite thing to cook on the grill! So easy, so fast, and it really impresses your guests! And you betcha it’s yummy!
I will always pick Starbucks over Caribou coffee unless there’s Cambodian iced coffee. Khmer iced coffee is stronger and often sweeten with only condensed milk, poured over ice. It’s simple to make and doesn’t require a lot of ingredients. The perfect summertime drink.
